I've created this journal to write about my experiences following the EAT TO LIVE 6 week plan created by Dr. Joel Fuhrman. This 6 week plan is a diet, but it's not a fad or crash diet. This plan is based on eating large amounts of healthy fruits and vegetables in place of refined foods and animal products. Rapid weight loss usually follows. Dr. Fuhrman claims that a person can lose 20lbs or more within the 6 weeks.
This attempt at the plan will be my first. If it works well, I will most likely continue past the 6 weeks.



ABOUT MYSELF: I am a 20 yr old female college student who is about 50lbs over my highest recommended weight for my height. I would like to lose that 50lbs and then some.
I'm 5'8" and at the start of this weigh 205lbs.



That puts me in the obese category.
So, obviously something needs to be done.



ABOUT THE PLAN:
The plan comes from Dr. Fuhrman's book EAT TO LIVE.



WHAT TO EAT:

Unlimited
eat as much as you want
all raw vegetables, including raw carrots (goal 1lb. daily)
cooked green vegetables (goal 1lb. daily)
beans, legumes, bean sprouts, and tofu (1 cup daily)
fresh fruit (at least 4 daily)

Limited
raw nuts and seeds (1 oz. max. per day)
avocado (2oz max. per day)
ground flaxseed (1 tablespoon per day)
(He allows some starchy vegetables, but says that for excellerted weight loss or for those who have trouble with weight loss to leave them out completely and get carbs and sugars from fruits and vegetables.)

Off-Limits
dairy products
animal products
fruit juice, dried fruit
(He says between-meal snacks are off-limits, but I am going to split my meals up into 5 mini-meals or more because I cannot eat that many vegetables in one siting. And, it has been shown that eating smaller portions more frequently throughout the day speeds up metabolism.)
